**Broiled Steaks with Parsley Butter**
**INGREDIENTS**
¼ cup butter or
margarine, softened
¼ cup chopped fresh
parsley or
4 teaspoons dried
parsley
4 T-bone steaks
(about 1 pound
each)
½ teaspoon salt
¼ teaspoon pepper
**SERVES 4**
**Make Ahead**
Prepare the parsley butter
up to 24 hours ahead.
Refrigerate until
ready to use.
**VARIATION**
Vary the flavor of
the parsley butter by
adding 1 teaspoon
roasted garlic.
**1** Preheat broiler. Line a
plate with waxed
paper. Mix butter and
parsley in a small bowl.
Shape butter mixture into
4 logs. Place on prepared
plate; cover. Chill until firm.
**2** Sprinkle steaks with
salt and pepper. Place
on a broiler pan.
**3** Broil steaks for
8 minutes; turn. Broil
about 8 minutes longer
for medium or until
desired doneness.
**4** Let steaks stand,
loosely covered, for
5 minutes. Place on a
serving platter. Arrange
a butter log on top of
each steak.
