# Chicken Muenster
## INGREDIENTS
* 4 skinless boneless chicken breast halves (about 5 ounces each)
* 2 eggs, beaten
* 28 butter crackers, crushed into 1 cup crumbs
* 2 tablespoons butter or margarine
* 1 tablespoon lemon juice
* 1/4 cup white wine
* 1/2 cup chicken broth
* 4 slices Muenster cheese
* 1 (4-ounce) can mushrooms

## Make Ahead
You can coat the chicken with crumbs up to **2 hours ahead**. Refrigerate until ready to cook.

## Variation
Feel free to vary the cheese. **Provolone** is a good substitute for the **Muenster cheese**.

Combine chicken and eggs in a shallow bowl. Preheat oven to **350°F**.

Spread cracker crumbs in a shallow dish. Coat chicken with crumbs. Heat butter in a large skillet over medium-high heat. Add chicken and cook until browned, about **5 minutes per side**.

Arrange chicken in a small baking dish. Combine lemon juice, wine and chicken broth in a small bowl. Pour over chicken.
