## **Cranberry Gobbler** (Serves 4)
### **Ingredients**
* 1 (8-ounce) can jellied cranberry sauce
* 1 tablespoon prepared horseradish
* 4 lettuce leaves
* 8 slices rye bread, toasted
* 8 ounces thinly sliced turkey breast
* 4 slices Swiss cheese
* 4 thin slices onion

### **Make Ahead**
Prepare the **cranberry–horseradish spread** through Step 1 up to **4 days ahead**.
Cover and store in the refrigerator.

### **Directions**
1. **Make spread.**
Mash cranberry sauce with a fork in a small bowl. Mix in horseradish and set aside.
2. **Build base.**
Place lettuce on 4 toast slices. Mound turkey slices on lettuce. Add a slice of cheese to each.
3. **Add spread.**
Spoon desired amount of cranberry–horseradish spread onto each sandwich.
4. **Finish.**
Top with onion slices and remaining toast slices.
Store any remaining sauce in a covered container in the refrigerator.

For a more substantial sandwich, add **2 paper-thin slices of honey-baked ham** to each sandwich.

### Make It Quicker
* Leftover turkey works well. Freeze leftovers in plastic bags; thaw sandwich-size portions as needed.
* Cut a tiny slice from both the top and bottom of the onion to make peeling easier.
