## Creamy Herbed Scalloped Potatoes
### INGREDIENTS
2 cups whipping cream
1 (4-ounce) package soft cheese spread with herbs
3 pounds new red potatoes, thinly sliced
1 teaspoon salt
¼ teaspoon pepper
1½ tablespoons chopped fresh parsley

You can prepare this dish through step 3 up to 4 hours ahead. Refrigerate until ready to bake and serve.

### VARIATION
Make your own herbed cheese with 4 ounces cream cheese, a dash of garlic powder and a tablespoon of tarragon or dill.

Preheat oven to 400°F. Combine whipping cream and cheese spread in a saucepan. Cook, stirring constantly, over medium heat until blended and smooth.

Grease a medium baking dish. Arrange half the potatoes in prepared dish. Sprinkle with half of the salt and pepper. Pour half the cheese mixture over the potatoes.

Repeat layers with potatoes, salt, pepper and cheese mixture.

Bake potatoes until top is golden brown and potatoes are tender, about 45 minutes. Sprinkle with fresh parsley.

### Make It Quicker
• Keep your chopped parsley from clumping as you sprinkle by placing it in a clean kitchen towel. Draw up the corners of the towel. Wet under running water, then wring out completely. Unwrap and sprinkle the individual parsley flakes evenly.
