MAKE AHEAD
Combine the steak and marinade in a sealable plastic bag and freeze for up to 3 months.
---
VARIATION
This marinade is also delicious when used on rib-eye roast—and even on skinless, boneless chicken breasts.
---
DIRECTIONS
**1.** Trim excess fat from steaks. Score remaining fat from outer edge to, but not into, the meat.
**2.** Mix soy sauce, lemon juice, Worcestershire sauce, garlic, sugar, ginger and hot sauce to taste in shallow dish. Add steak, turning to coat.
**3.** Marinate steak, covered, in refrigerator, turning occasionally. Drain and discard marinade. Preheat grill.
**4.** Grill steaks 4 inches above hot coals or broil 6 inches from heat source for 7 minutes. Turn steaks over. Grill or broil for 5 minutes longer or until done to taste.

Make It Quicker
* Prepared crushed garlic, available in jars in most produce sections, can cut down on preparation time.
* If the weather does not permit outdoor grilling, try a ridged grill pan on the stove top or broil in the oven.
