# Grilled Ginger-Butter Chicken
## INGREDIENTS
* 1 cup butter or margarine, softened
* 1 tablespoon ground ginger
* 1 tablespoon soy sauce
* 1 teaspoon grated orange peel
* 2 teaspoons fresh orange juice
* 1 (3-pound) chicken, quartered

## Make Ahead
Prepare the ginger butter up to a week ahead and store in the refrigerator. Use as a basting sauce on any grilled meat or seafood.
## VARIATION
For a different citrus flavor, use lemon peel and juice instead of the orange.
## DIRECTIONS
**1.** Preheat grill or broiler. Combine butter, ginger, soy sauce, orange peel and orange juice in a medium bowl; mix well.
**2.** Loosen skin from chicken pieces, being careful not to tear skin. Spread 1 tablespoon ginger butter under skin of each chicken piece.
**3.** Place chicken on grill rack or broiler pan, skin side down. Grill or broil chicken for 15 minutes.
**4.** Turn chicken. Grill or broil, basting frequently with remaining ginger butter, until juices run clear when meat is pierced with a knife, about 20 minutes longer.
## Make It Quicker
* Ginger butter can be frozen for up to 3 months. Shape the butter into a log, wrap tightly and freeze. Slice off only as much as you need.
