## Minted Greek Potatoes

### INGREDIENTS

2 pounds new potatoes
1 clove garlic, minced
1 teaspoon dried oregano
1 tablespoon chopped fresh mint
2 tablespoons chopped fresh parsley
1 teaspoon salt
3 tablespoons vegetable oil
