# Oven-Barbecued Chicken
## INGREDIENTS
3 pounds chicken legs and thighs
¾ cup ketchup
¼ cup packed light brown sugar
¼ cup sweet pickle relish
1 teaspoon Worcestershire sauce
2 tablespoons vinegar
2 tablespoons minced onion
½ cup honey

## Make Ahead
Prepare the barbecue sauce in step 2 up to 2 days ahead. Store, covered, in the refrigerator.

## VARIATION
For a tangier taste, omit the pickle relish from the barbecue sauce and add 1 additional tablespoon of vinegar.

Microwave chicken in a glass baking dish on HIGH for 10 minutes, turning pieces once. Drain, remove skin and return to baking dish.

Preheat oven to 350°F. Combine ketchup, brown sugar, relish, Worcestershire sauce, vinegar, onion and honey in a bowl and mix well. Reserve ¼ cup sauce.

Spread remaining sauce over chicken. Bake for 20 minutes or until juices run clear when pierced with a fork.

Pour off excess juices. Baste chicken with reserved sauce. Bake for 10 minutes longer.

## Make It Quicker
• Use freshly roasted chicken available at the supermarket deli counter. Remove the skin and proceed with step 2.
• If your brown sugar has hardened, transfer it to a glass jar and add half an apple; seal tightly and let rest for 1 day.
