## **Poppy Seed Dressing with Salad Greens**

### **Ingredients**
#### **Dressing**
* 1 shallot
* 1/4 cup honey
* 3 tablespoons cider vinegar
* 2 tablespoons olive oil
* 2 teaspoons Dijon mustard
* 2 teaspoons poppy seeds
* 1/2 teaspoon salt
* 1/4 teaspoon pepper
#### **Salad**
* 6 cups green leaf lettuce
* 1 (11-ounce) can mandarin oranges
* 1 apple, chopped

### **Make Ahead**
You can prepare the dressing up to **2 weeks ahead**. Keep refrigerated in a closed container until ready to use.

### **Directions**
1. Mince shallot. Place in a medium bowl. Add honey, vinegar, olive oil, mustard, poppy seeds, salt and pepper. Whisk until very well mixed.
2. For the salad, tear greens into bite-size pieces. Place in a large bowl.
3. Drain oranges; add to greens in bowl. Add apple.
4. Pour dressing over salad. Toss well.

Vary the fruit according to the season. **Pears, strawberries and kiwifruit** will all benefit from this delicious dressing.
