**Smoky Beef Ribs**
**INGREDIENTS**
3 pounds beef ribs
1 cup ketchup
2 tablespoons liquid
smoke
2 tablespoons
Worcestershire sauce
1 teaspoon onion salt
1 teaspoon garlic salt
1 teaspoon pepper

**Make Ahead**
Bake ribs 1 day ahead as
recipe directs in step 1. Drain
fat; refrigerate ribs. Before
broiling, bring ribs to room
temperature and proceed as
recipe directs in step 2.
**VARIATION**
For a spicier spin
on these ribs, add
1 teaspoon cayenne
pepper to the sauce
in step 2.
**1** Preheat oven to 400°F.
Cut ribs into serving-
size pieces. Arrange in a
single layer in a shallow
baking pan. Bake, loosely
covered, for 45 minutes.
**2** Combine ketchup,
liquid smoke,
Worcestershire sauce,
onion salt, garlic salt
and pepper; mix well.
Reserve half of sauce.
**3** Preheat broiler. Place
ribs bone sides up on
broiler pan. Brush lightly
with some sauce. Broil for
10 minutes.
**4** Turn ribs. Brush
with reserved sauce.
Broil for 5 minutes longer,
basting frequently with
remaining sauce.
Make It Quicker
• To save time, instead
of baking the ribs in
step 1, boil them for
about 20 minutes.
Proceed as recipe
directs in step 2.
• Have your butcher
cut the ribs into
serving-size pieces to
reduce preparation
time and cleanup.
