# Tarragon Sirloin Tips with Mushrooms
## INGREDIENTS
* 1 tablespoon vegetable oil
* 1 pound sirloin steak, cut into 1-inch cubes
* 1 medium onion, sliced
* 1 cup sliced fresh mushrooms
* 1 (10-ounce) can cream of mushroom soup
* ½ cup water
* 1 teaspoon dried tarragon
* ¼ teaspoon pepper
* ¼ cup sour cream
**SERVES 4**
## Make Ahead
Prepare the sirloin tips through step 3 up to 8 hours ahead. Cover and refrigerate until ready to reheat and finish.
## VARIATION
For a richer flavor, substitute beef broth for the water.
## DIRECTIONS
**1.** Heat oil in a large skillet over medium-high heat. Add sirloin; cook, stirring frequently, until browned.
**2.** Add onion and mushrooms. Cook, stirring occasionally, until onion is tender.
**3.** Stir in soup, water, tarragon and pepper. Reduce heat; simmer until beef is tender and sauce is heated through.
**4.** Stir in sour cream. Heat gently until hot, but do not boil. Serve immediately.
## Make It Quicker
* Cut the sirloin into cubes while it is partially frozen. The firmer meat is much easier and quicker to cut evenly.
