## **Thousand Island Dressing**

*Makes 1½ cups*

### **Ingredients**

* 1 egg
* ½ cup green olives, minced
* 2 tablespoons sweet pickle relish
* 1 tablespoon grated onion
* 1 cup mayonnaise
* ¼ cup chili sauce
* ⅛ teaspoon hot red pepper sauce

### **Make Ahead**

This dressing will keep for a week refrigerated. The flavors will fully develop if made 24 hours before using.

### **Directions**

1. **Cook egg.**
   Place egg in a small saucepan. Cover with water. Boil for 5 minutes over high heat. Turn off heat; let egg sit for 5 minutes. Drain; peel and finely chop egg. Place in medium bowl.

2. **Add vegetables.**
   Add olives, relish and onion to bowl.

3. **Finish dressing.**
   Add mayonnaise, chili sauce and pepper sauce to relish mixture. Stir well to combine.

4. **Serve.**
   Pour dressing over mixed greens or a cucumber and tomato salad.

### **Variation**

For a French twist, add ½ teaspoon dried tarragon and 2 teaspoons tarragon vinegar in step 2.

Save time by putting all the ingredients, roughly chopped, into a blender or food processor. Process until smooth.
